In the heart of one of Paris's most ancient neighborhoods, a stone's throw from Ste-Eustache church, this restaurant occupies the site of a 1500s convent. After the Revolution, the convent was converted into a coaching inn that preserved the original stonework and massive beams. La Fermette prepares rich, savory stews and confits celebrating agrarian France, serving them on the ground floor and on a mezzanine resembling a medieval choir loft. Menu items include an age-old but ever-popular magret (breast) of duckling with flap mushrooms, andouillette, and a sometimes startling array of cochonailles (pork products and byproducts) you probably need to be French to appreciate. Cassoulet and pot-au-feu are enduring favorites.
