You enter this rustic tavern through a busy bar with heavy oak beams, hanging hams, and ceramic plates. This favorite showcases the culinary generosity of France's most isolated region, the Auvergne, whose pork products are widely celebrated. The best examples are a chicory salad with apples and pieces of country ham; pork braised with cabbage, turnips, and white beans; grilled tripe sausages with mashed potatoes and Cantal (a strong, hard cheese) with garlic; and pork jowls with green lentils. The cholesterol is intense, but devotees love this type of food. Nonpork specialties are pan-fried duck liver with gingerbread, perch filets steamed in verbena tea, and roasted rack of lamb with wild mushrooms. Dessert might be a poached pear with crispy almonds and caramel sauce or a wine-flavored sorbet.
