Paris's most high-profile brasserie de luxe is this artfully high-tech place funded by British restaurateur/wunderkind Sir Terence Conran. (His chain of restaurants in London has succeeded in captivating a tough audience of jaded European foodies.) It features an all-white futuristic decor in a large street-level dining room and a busy bar a floor above. Menu examples are grilled entrecôte with béarnaise sauce and fried potatoes, Charolais duckling with honey and spices, sashimi and sushi with lime, monkfish filet with saffron in puff pastry, and a collection of shellfish and oysters from the waters of Brittany. The wines are as stylish and diverse as you'd expect, and the trendy crowd tends to wear a lot of black.
