The big, hearty chili bowls are geared to young palates, which tend to be suspicious of anything unfamiliar. The extensive list of chili choices is clearly marked by spice level, from the traditional Abilene with ground beef, tomatoes, basil, and red wine (mild enough for tenderfeet) to the Texas Chain Gang, which adds jalapeños to the mix for those who prefer hot.
