This is a bastion of perfection, an elegant enclave of haute gastronomy between the place Vendôme and the Tuileries. When leading chef Alain Dutournier turned this 17th-century convent into a restaurant, it was an overnight success. The interior is like an early-1900s bourgeois house with several small salons opening onto a sky-lit courtyard, across from which is a glass-enclosed kitchen. You'll find a sophisticated reinterpretation of cuisine from France's southwest, using seasonally fresh ingredients and lots of know-how. Examples are roasted veal kidneys cooked in their own fat; grilled wood pigeon served with chutney and polenta; crayfish with sweet garlic; and roasted leg of suckling lamb from the Pyrénées with autumn vegetables. Lighter dishes are scallops wrapped in parsley-infused puff pastry served with cabbage and truffles, and mullet-studded risotto with lettuce. For dessert, try a slice of pistachio cream cake with candied tangerines.
