Expect an imaginative menu from the most acclaimed of the Hyatt Regency's five restaurants. La Coquina is an upscale but casual eatery that is well appointed with marine life and seashell themes and has a color scheme that includes lots of soft pinks and whites. The veal tenderloin with sake-glazed prawns is a real winner. Ditto for the sugarcane-seared scallops, which arrive with rice grits and artichokes. As for the mango-glazed duck breast, it's introduced with a shiitake-risotto cake. When making your reservation, request a table that has a view of Lake Windsong.
