This is a very sophisticated and elegant restaurant in a Gatsbyian sense (if Fitzgerald were here to give it more of a modern tilt). A pianist plays softly in the entryway, and many tables overlook the lush Villas of Grand Cypress resort. Service is formal and attentive. It's a great place for a nice dinner, although not necessarily a romantic one. One of our favorite temptations is an herb-roasted veal chop (insist on medium rare) with exotic mushrooms and a red-wine demi-glacé. The duck is presented in a trifecta: confit leg, grilled breast, and pan-seared foie gras with a pear-chutney marmalade. Seafood fans can choose baked halibut wrapped in hearts of palm with charred-mango chutney and coconut rice. There also are nightly specials. Note that the Swan adds an 18% gratuity to all bills. Tip: Seating is on two levels, but you should skip the second level, which has more of a golf-and-grab atmosphere.
