Wonderful home-cooked broth and noodles are Kako's signature. Kako's Saimin was a west-side phenomenon for years until Hurricane Iniki turned out the lights, so saimin aficionados are ecstatic that this former Hanapepe fixture has reopened, this time in Lihue. After a long absence, the new installation -- just as tiny and just as good as the original -- is cause for applause. Owner Dorothea Hayashi uses a secret recipe to make her broth from scratch, and the noodles, also house-made and fresh, are the perfect accompaniment. When teamed with her teriyaki chicken sticks, the saimin and wonton mein are pure heaven for noodle lovers. The saimin comes with a choice of toppings, such as barbecued chicken, cabbage, sliced eggs, and green onions. Old-fashioned, home-style hamburgers like Mom used to make, flavored with onions mixed into the patties, fly out the door at a miraculous $1.75.
